Cordura fabric. You'll have to get it through outfitters like people who supply tents, outdoor gear, canvas, stuff like that. You won't find it at a local fabric shop.

Cordura is durable, rip-stop nylon fabric. It can be purchased in a waterproof form with a sort of rubberized coating. It is not possible for fabric to be both waterproof and breathable. You'll have to choose one or the other. No nylon fabric is particularly good for breathability. For that you would need a natural fiber. The strongest of these would be hemp canvas, but it would not be resistant to mold like the nylon.

Most vests are made from a light weight cordura nylon, without the waterproof coating.
